Just chatted with the clients lead on this and we do have a plan in place for Coppola (Unity 4.0, later this year) that may handle this.
Short story is there will be a push install option for VMO to install it and auto configure it with the Unity server name and extension number out to the clients, which will be nice. As part of that the VMO client will be updated to actually store a 2nd server name/ip address which it can try if the first attempt fails (i.e. the primary server is under water and itll next try the failover server). It should be possible to push this info to the clients using the push install mechanism so if you change the server name(s) you can update it for folks quickly.
