When trying to open a voicemail message within Outlook I'm receiving an error message "Unknown problems are preventing the completion of the call." I thought it might be a DNS issue but it's not, I can ping the Unity box by UNC and IP.

If you're getting that error message the client is definitley connecting OK with the Unity server, the user is found in the directory and they are cleared for dialout (i.e. their COS is OK). The dialout from the Unity ports itself is failing for some reason...
check to be sure there are ports configured to do dialout and that you can call that phone from that port (i.e. there isn't some goofy dial plan problem preventing the dial from going through). You can turn on notification options in Unity to force dialouts that way to see if you can ring the extension as well... this can sometimes be helfpul in tracking down such problems.
