I am planning to move users from server ABC (246) to Server XYZ (314). Does this affect their Viewmail clients at all ? In other words, if they have extensions (doesn't change of course) and server filled in, what will happen if their unity server name has changed ?

It's my experience that the client even works with blank fields - but what if the MAPI has made a connection prior an the fields are filled in ?
If the user uses viewmail to route the msg to the phone, ie, play or record outlook msg via the phone, then yes you will have problems since view mail is not able to find the new server to make the connection.
