I have read that 1m and 3m cables are available in addition to the default 0.5m StackWise cable. Is 3m the maximum length available.
Basically I am looking to connect switches on different floors utilising the 32Gbps connectivity provided, or is this not possible or is there a better way to get high bandwidth between floors? TIA

Yes, 3m is the maximum length available.
Use multiple connections in a etherchannel to get more bandwidth between the floors:
