Can the two Gigabit ports on a 3550 be used to create an Etherchannel to say a 4912G? Or are teh GBIC ports on the 3550 only to be used for GigaStack connections to other 3550s?

yes they can.

The Gigabit interfaces on a 3550 can be configured as etherchannel using GBICs other than the GigaStack. The 4912G supports etherchannel as well. You should be able to configure a Gigabit Etherchannel between the two - for example using a SX GBIC.
