How do I determine the software version of a Supervisor engine on a catalyst 4503?
Doing a Sho Ver I can easily identify the CatOS version, but not the sup eng version.

Sounds like you have a supII+ or above which runs IOS, therefore show verison will not show the sup type. Show module will show you the module model number:

The Supervisor eng is an older SupII, still running CatOS 7.3.(2)
I'm actually looking to get the version of software on the Supervisor eng and trying to find out what power supply is in it to plan for blade upgrades.

Okay, you just said your CatOS is 7.3(2), That is your software version.
In addition show environment power will tell you what kind of power supply you have:
Console> (enable) sh environment power
