I am able to get into the configuration screen. However when trying to scroll down to the IP Configuration field, I get (MENU IS BUSY!) . Will peforming a reset from the Main Menu clear this up so I can get in to re-ip the switch??

Make sure that you have followed the guidelines that has to be taken care while working within the console menus.
Under the reset function, there is a function called "Clear Nonvolatile RAM ".This will actually allow you to delete all user-configured parameters such as baud rate, IP address information, EtherChannel, VLAN, Spanning Tree, and then resets the switch. So ,you can give the Ip address again to the switch using this menu. But beware : Follow the instructions before clearing the NVRAM.
See the document for more details.

You can power cycle the Catalyst 3000 to re-run the diagnostics to see if that will clear the error.
