I am installing point-to-point t1's between all my branches.. I have MC3810 routers at all branches and the central site.. I'd like to implement VoIP.. I know you have to have gateways to accomplish this to packetize you're voice.. can the 3810 do this?

Yes, you can implement VOIP using MC3810. It can act as your gateway.
