What's the easiest way to find what version of CiscoWork2000 is installed on a machine? RME, traffic director, ciscoview, campus manager

Either look at the Install CDs which has the versions listed for respective applications OR login to CW2K->Server Configuration->About the Server->Applications and Versions.

What is your current version for CD-One?.
You will only find patches and Incremental Device Updates (IDUs) on CCO for CW2K. If you're looking for Complete/Full versions, they are not available as download from CCO. See http://www.cisco.com/warp/public/477/top_issues/jump9.html for details including the product part#, ordering procedure, contacts etc.

I'm guessing CD One 3rd Edition since all the installed dates are 2001. I'll probably have to update the individual updates. Can you point me to where I can find the incremental updates?

There are no IDUs for CD-One 3rd Edition. Only for 4th and the 5th Edition. You can find the IDUs at: http://www.cisco.com/kobayashi/sw-center/sw-cw2000.shtml
located under the respective applications URL.
