What are the commands for changing the line encoding and framing on the serial interface of a 2600 running 12.1 IOS?

Diego,
This is a controller command.. and dependant on HW you'll have different choices. Controller Numbering will change based on interface number as well.
Examples:
Router(config-controller)#framing {esf | sf}. or.
Router(config-controller)#framing {crc4 | no-crc4}

If its a wic with internal CSU/DSU, then you can change it using,
"service-module T1" command
For more info check , http://www.cisco.com/warp/public/471/52.html ( The link is for a 2500 series router, but basically the commands are the same)
If your wic is a wic-1t or wic2t, which needs an external csu/dsu, then you can configure the line encoding and framing, only on the csu/dsu.
