Is it possible (and has anyone attempted) to connect a Server to a Catalyst 6509 using a Fibre NIC (server) and an SX-GBIC on a 16 port 1000BaseX Ethernet module?

Yes, this is possible as long as the Fibre NIC is a Gigabit SX adapter.
