I would use a 3550-24 for your core switch. These are close to EOS (if not already) but the reason for this is based on the PoE standards. 3550 only supports the cisco proprietary form of PoE where as the 3560 supports both. Since PoE is not a requirement, the 3550 should work fine. You can also have more control over your traffic such as rate limiting, QoS, etc. If you wanted, you could also run routing protocols on this (even BGP) with the right image. Hope this helps.
