how to achieve load-balance on a HSRP situation?

In a HSRP situation, you would typically load-share by creating multiple HSRP groups with multiple virtual IP addresses. You could then assign half of the workstations on that segment the first virtual IP address as the default gateway. On the other half of the workstations, you would assign the other virtual IP address as the default gateway.

You would therefore get some semblence of load-sharing that way.

A better option is to use GLBP which has inherent support for load-balancing and allows you to use the same default gateway for all hosts on the segment.

For only one server,how to do load-balancing?

THe only option would be to run a routing protocol on the server so that you can divide up the outbound traffic between different next-hop routers.

What operating system is the server running ? You will need to look at the vendor documentation for that OS to get info on how to set up routing protocols on that OS.
