We are going to have 3 t1's from the same carrier coming in to a cisco 3640 with 3 wic's in it for our internet access.
Other than the configuration of ip addresses, etc on the 3 wic's and ethernet interfaces, and 3 default route statements, one for each T, is there anything else i need to do?

Need to know what kind of T1s are they..Dedicated or Channelized..along with encapsulation on it. You need to configure the encapsulation under that interfaces..If they are Channelized (for dialin access) you need to know the signalling type and configure etc..
Mostly you have dedicated line and you can grooup all the lines into one virtual interface (if encapsulation is ppp) to get 3xT1 aggregated thruput..Tejal

They are 3 dedicated point to point T1's so the encapsulation will be ppp. By just enabling that on the interfaces will the Cisco IOS handle the load balancing?

You need to group all the T1's togather in one multilink group..Here is the place which discuss that config
