If you have a telnet session running to at router and jump with a telnet or SSH to another host. Is it then possible to log all information/commands going into that session??

it depends on where u telnet into. If you telnet from a PC to a router A, then from Router A to router B, by giving a terminal monitor command in B, you can get output of debug and other console messages.
