anyone have any experience getting itunes 'sharing' to work across subnets with ios?
sniffs show it using port 5353 and doing some igmp, Apple says to open 3689...
I guess I could use ip helper-address and forward the ports...
anyone done this?

According to IANA, these two ports correspond to:
daap 3689/tcp Digital Audio Access Protocol
mdns 5353/tcp Multicast DNS
I also found this helpful:

Since iTunes is using Rendezvous to discover iTunes machines, I think using an ip-helper for port 5353 (which is used by Rendezvous) is what you need to configure.
I'm very curious if you can get this to work. I may give it a try on my home network since I have nothing but Macs.:)
