does eigrp load balance automatically, say I had 2 serials to one place, would it automatically load balance, how would I turn it off say on one link ?

AFAIK all the routing protocol does supports equal cost path load balancing.
if u dont want to have this behaviour i would suggest to try changing the delay on the interface (on which you dont want to pass the traffic in nomral conditions)which will change the cost and will turn off the loadbalancing on both the links..

yes it load balances automatically.
you can stop load balance between two serial ports by alteration delay or bandwidth value of serial interface.
