We hvae just upgraded the network from the Cat-5500's to the stackable Cat-2980GA's running CatOS 6.1(5). I have copied all the configs at the time of the upgrade and when we could not ping one of the Cat-2980G's, I noticed that the default route statement was missing from that switche's config.

Did you use the code that came with the 2980"s ? I have seen when you upgrade or downgrade a box losing certain config parameters , if it was an upgrade then I would say it's a code bug . You shouldn't be losing config parameters .
