Other than turning security on is there a way to list the MAC address of the workstation or printer connected to each port on a Catalyst 5500 switch? Thanks.

You can use "show cam dynamic"

"Show cam dynamic" works too well. I get hundreds of addresses on the feed. Is there a way to exclude port 1/1 or to list a range of ports? Thanks.

You can specify the module/port to see just a particular port:
show cam dynamic 5/12
will show the MAC address learned by port 5/12
