Is there a real/practical limit on the number of subinterfaces which can be defined on a 2600's Ethernet ports?

Yep, that answers it very clearly. Interestingly, on my 2621 (12.0(7)), the "show idb" command does NOT report the maximum possible number of IDB's - despite what this document and its example claim. I guess I'll have to presume that this firmware uses the default of 300.
