meaning of interface counters

I was thinking about using the input/output byte counters on a show interface (ultimately I'd use SNMP) to determine line utilization. What I'm finding is that the numbers are all over the place. If I take the total bytes and divide by total packets, I get an average packet size of anywhere from less than 1 to a fairly reasonable 700. Any comments on counter accuracy?

You can get an explaination for each field of the show interfaces command if you paste the ouput in the OI tool. The link for the same is:
