Can anyone tell me the normal way of hosting servers behind a pix firewall, do you normally put different subnets in the dmz etc ?

Carl,
You can put your servers on separate sublet and assign this subnet to DMZ.
in this case there must be NAT entries from inside and outside to DMZ for connectivity.
