I would like to know that if I set an interface encapsulation to PPP, is the PAP/CHAP authentication switched off by default, and if I do a 'show int' on the appropriate interface, will the authentication show up if activated?

By default, there is no authentication. You need to configure PAP/CHAP explicitly. On show interface, it doesnt come up whether authentication has been activated, but you can definitely check it in running config. You can see if there is any authentication mismatch using "debug ppp authentication".
Note that debug commands have a negative impact on a production network router.
