Can I use a 2501 series router as a DHCP Server?
If yes, how to configure the router?

Here are couple of links which will help you to configure cisco router as dhcp server

FEI..the PIX DHCP server is cut from same code, as commands are similar and configuration/features the same too. This applies to 5.3 as I know it, version 6.x remains to be seen.
It is nice to see documentation on this feature/service. Seems that is was released in code before the W3 had docs. It is fairly easy to setup and configure if you have good working knowledge of IP and DHCP/DNS to begin with.
