In CatOS, you can do a "show running-config all" and it will show you as much as its going to.
In IOS, there is a 'show running-config full' on the newer IOS's, but I believe it won't give you what your looking for. The only way I know of finding out what the defaults are is to explicitly set the value, if it doesn't show up in the config, its the default. Either that or look it up in the documentation, its usually pretty good about telling you what the default is.
As always, using the "default " will set the value back to what its default was.
