Is there any way of getting any utilization reports from my switches, and is there any way of getting an ip address of whats plugged into a particular port ?

there are few tools available, one is netflow tracker from crannog software.

To answer your other question, there is no quick and dirty way to find the ip address of a device connected to a given port unless it is a cisco device, which you can find by using "show cdp neighbor detail"
For a PC, you'll have to first check the MAC address table entry for a given port. Then check the ARP table on the default gateway for that vlan, which will give you a list of MAC addresses and associated IP addresses. Cross reference the mac address from the MAC table with the ARP table, and that will give you the IP address.
