I am going to install a cisco 2851 with CME and IP telephones.
The router will be used for data so the PC's and IP telephones will be in the same network.
I want to do voip traffic prioritization, so which is the best option for doing it?
Vlan's? Can I have unique DHCP server for IP telephones and PC's? Is there any good documentation for starting?

Even if the router is used for data, the voice and data should not be in the same network. The usual design is creating data vlan and voice vlan. Both traffic are serviced by the router but the traffic are segmented by separate network/vlan.
so which is the best option for doing it?
Vlan's?
Yes,
Can I have unique DHCP server for IP telephones and PC's?
If they are segmented by vlan they will have ip address assign to their respective vlan.
Is there any good documentation for starting?
Maybe this doc will help:

Hi Friend.
You are using 2851 as CME, you all IP phones will get register to the CME. You have to create a separate vlan for voice traffic and another vlan for data traffic.
When you connect the IP phones to Cisco switch, there is a special dot1q trunk gets formed which carries your data and voice vlan. Your voice traffic will get priotrize be default. If you want you can use QOS and have the voice traffic priotrize at evenry intermediate device across your network.
HTH, please rate if it does.

So are you saying that VoIP will be prioritized by default only plugin telephones in the switch?
This special dot1q trunk is enabled by default?
Which switch do you recommend me?
What about the autoQos utility? Is good enable it in router 2851?

so here you are going to use seperate DHCP server or you will conigure your router as DHCP server...and as you are going to keep data and voice vlan seperated then you need to configure DHCP.
Amit here which QOS tool will get by default...
sarenos for auto qos this link will help you for your network requiremets http://www.cisco.com/en/US/products/ps6613/products_qanda_item0900aecd8020a589.shtml
hope this will help you
