Why 2 VTP servers only ?

I am re-designing University wide network infrastructure with 4 Catalyst 6006 at core layer and Catalyst 2900s at access layers.

By default all switches are configured to be VTP servers. According to the Cisco text, we should set only up to 2 switches to be servers, and the rest of them clients. If I implement "password security" on all VTP communication, is it OK if I leave all switches to be VTP servers. What is the reason for "only 2 servers"?

From the best practices document ".....There is no specific recommendation on whether to use VTP client/server modes or VTP transparent mode. Some customers prefer the ease of management of VTP Client/Server mode ......"

It also mentions 2 servers as opposed to one server for redundancy purpose. I would assume this is because most networks have 2 core/distribution switch model. In your case having 4 VTP servers should be ok.
