I am trying to find the best solution to setup our Corporate Email to be available on the web without compromising security. Can I setup on the PIX to only allow users access to the mail folders on our email server? Any other suggestions would be appreciated

Nope. You would need an application level proxy of some sort, but your best bet is to lock down the server as much as possible at the application and file/folder level. You aren't likely to find a specific product that will cure a non hardened server.

Have you thought of setting up a separate webmail box on your DMZ with SSL authentication?
How about having your corporate users use a VPN connection to access your internal mail server?

Raptor also has really good SMTP proxies, but it's not as fast or scalable as PIX. Good for small business, though.
