Info on layer 3 switching

I was hoping to get some info on layer 3 switching. I would like to put up a hardware security solution in my server room, however my users are on another subnet, so whatever traffic I allow to pass through to my servers must account for all user connections. With layer 3 switching, are there products available that will block particular ports, like everything but 80, but only for certain interfaces on the switch. In other words, can you configure security differently for every device plugged into the switch?
