how can I limit the traffic in the inside network with ACL's ?

i want to limit the p2p applications

for example, how can I limit the audiogalaxy if this application doesn't have a registered number port ?

Use a protocol analyzer and nab its most commonly used ports, which will help. Worst case scenario, lock down all ports, then open up only the ones you must (ftp, ssh, etc).
