Needing some clarification here. I understand that outbound VPN Client access from behind the PIX w/ PAT can be done with fixup esp-ike command on ver 6.3. Is there any way possible to get this to work with multiple outbound VPN Client sessions w/ PAT?

The only way is to have your VPN client use some sort of TCP/UDP encapsulation for the IPSec packets. Most VPN clients and concentrators have this capability noawadays, and if it supports NAT-T then it will all be automatic and everything will be encapsulated into UDP port 4500, which the PIX will happily PAT for you.
