Yes, I do believe that is possible. While configuring a site-to-site VPN you need to specify exactly what traffic you will be encrypting. This is done using access lists. An access list used with a crypto map statement (ie to specify what traffic will be encrypted), never denys any traffic. The deny in this instance would simple mean 'allow the traffic through unencrypted'. In such a setup, traffic encrypted by the VPN client would pass through the site's VPN gateway and routed to the remote gateway. I guess, all you need to do is to be careful of the way you configure your access lists.
