I have a Static mapping for my Email Server (public to private IP) and I was curious about the behavior of a static mapping. I am clear about incoming packets as far as addressing. But what about outgoing traffic from that server? Does the pix see an outgoing email packet and insert this static public address as the source IP?

Yes it does. It uses the static statement like it would NAT, except it always uses that assigned external IP Address instead of pulling an IP from the NAT Pool.
