You can look at AVC on the wlc's starting on v7.4. Here is a guide which you can look at and see of it provides with with some of what you are looking for.

Once you configure AVC on your controller you can export netflow data from you controller to a netflow collector. Then you can get an historical trend on utilization of your wireless network based on recognized application. Without a netflow collector you can monitor Application visibility in each controller in real time, but you cannot get a holistic view of your environment if you have multiple controller.
Not all netflow vendors support cisco WLC flow export. I have tested this with Scrutinizer and they were the only vendor support this in few months back. You can refer below to see how it looks like

If you have Cisco Prime Assuarance, then also you can do the same without having 3rd party netflow collecting tool.

Q. What is Cisco Application Visibility and Control?
Q. How does AVC work?
Q. What technology is used in the AVC solution?
A. Cisco AVC consists of the following technologies:
• Network-Based Application Recognition Version 2 (NBAR2), next-generation DPI technology that can identify more than 1000 applications and support application categorization, with the ability to update the protocol definition.
• NetFlow Version 9 export to select and export data of interest, allowing easy consumption of application performance statistics by Cisco and third-party applications.
• Reporting and management tools, such as Cisco Prime™ Infrastructure with Assurance module, an enterprise-grade infrastructure and service-monitoring tool for reporting of application and network performance that can provide up to 30 different reports for application visibility.
• QoS to facilitate the control of application perform
