Finding Clients on an SSID with PI / WLCs?

We're hoping to retire an SSID from our wireless network, but before doing that we want to make sure we know all the devices that are still using it so we can proactively contact the users / inform the help desk.

I can look at the controllers / PI 2.1 to see what clients are currently associated to a given SSID, but is there a way to collect a list of all the clients associated to a given SSID over, say, the past week?

You should be able to look at the reports under SSID.  You can adjust the dates also. You might be better off, doing reports from one SSID at a time.
