is there a way to see the Server certificate presented to the uWGB

We'd like to be able to inspect the server certificate presented to the Cisco WGB when attempting to join an EAP-PEAP network.  The Windows and MAC  OS X supplicants allow for this to happen, and we know that the WGB receives the certificate since it tries to validate it.  We'd like to be able to inspect this received certificate.

From Cisco AP that's configured as WGB that's not unfortunately possible.
What you can do as you mentioned is to connect a client with an OS (windows, macOS..etc) to the same SSID to which the uWGB is connecting and then inspect the certificate.
