I have a Cisco 5510 at our HQ with 4 Cisco 857 routers connected to the HQ from the sub branches and appear not to be able to configure multi vpns between the offices for Exchange routing. Am I doing this properly or will this work with the hardware I have?

From the picture you provided - you appear to be using the same IP subnet in 3 locations is this correct?
As without subnetting the 10.0.2.x range into smaller ip ranges - the only other option I can think of is bridging over a GRE tunnel in a VPN to be able to run the same IP range in 3 locations.

I am running seperate subnets
HQ 10.0.0.0
sub 1 10.0.1.0
sub 2 10.0.2.0
sub 3 10.0.3.0
sub 4 10.0.4.0

Just make one crypto map with four sequence numbers (for each branch) and if you want spoke to spoke communication, have a look at:
