I have some logs in Nexus 5k that I didn't found in anywhere and would like to know what this means

As we can see, the dates and interfaces are random when it goin down. Apparently I don't have any problem with access my storage when this logs occurs.

What kind of CNAs do you have? The message means the switch is waiting for FLOGI. Most common reason for a vFC to flap is missing FIP Keep-alive causing the interface to go down and then waiting for FLOGI.
But you can collect following outputs to see if there is anything pointing to the problem
show platform software fcoe_mgr info interface vfc x
show platform software fcoe_mgr event-history errors
