I have used both, but am embarking on a brand new network running a 4500 series at the core and 3750's in several closets.
I am relatively sure I have to run COS as we are wanting to do Dynamic VLAN's.
Just wondered if there were any real reasons (besides personal preference) to go with one vs. the other.

Yes, it is COS that is used for the quality of service. This makes to classify data and send it reliably.

Here is a config document for configuring dynamic VLANs on 4500 IOS.
The 3750s do not have a CAT OS option, so I would just go with IOS on the 4500.
I like CAT OS, but life is simplier if everything has the same OS, and CAT OS is limited to a few models.
