You don't need to do configuration backup for subscribers. So, you can do BARS backup to network location for CRS and publisher. Unity backup do to local folder and next copy it (scheduled tasks) to network location.
Before patching it is good to do ghost image for server to avoid manual installation ;)

You can use BARS for both CUCM and for CRS.
For Unity the best way to go is to use DIRT in order to do the backup and save most of the config.
DIRT is located in the Unity Tools Depot and BARS can be downloaded from CCO and installed on the PUB for the backup.

Pray. Pray very hard that nothing ever breaks. (just jokin!)
BARSs for the Publisher (no need to backup Subs)
Unity uses DIRT
BARS for IPCX
If you want even more backup, since the drives are mirrored, you can buy (1) extra drive for each server. Once a week or whenever you want, pull a drive, and insert a new drive. You now have a complete copy of everything. (OS included)
If your server completely dies, or is corrupted you shutdown the server, pull the drives, insert the backup drive, turn on. back to where you were (last drive pull)
Hope this helps
