I was wondering if there was a way to change the default addressing method to be the extension, so that a user doesn't have to press ## to change from spelling the name to entering the extension when forwarding a message. I would like to maintain the ability for spelling by name if the extension is unknown.

Sure - this can be changed on a per user basis on the Conversation page in the SA or via the PCA web interfaces. You can also change it for groups of users (or everyone) using BulkEdit which you'll find in the Tools Depot on your desktop. You can also change it in the subscriber template(s) you're using so that newly created users will have this default.
It lets you set the default to addressing by extension or by name (first name then last name) or by name (last name then first name).
