If I rename this will it automatically reset all users associated with this profile?

The doc says:
"If you are updating an existing voice-mail profile, click Restart Devices to restart all devices that are associated with the voice-mail profile."

Not sure, but you could run a test. Create a phone, with a dummy voicemail profile, rename the voicemail profile and see if it resets the phone.
