Can someone please point me in the right direction of a Unity Connections 8.6.1 (step by step) install guide or check list?

It's installed fresh as you would CUCM or prior versions of UC.  After installed, there's no specific documentation that tells you what to configure next.  You'll want to take a look at the System Admin guide for 8.x here which has everything you'll likely need for configuration possibilities:
