What is the recommended cabling and cable type for wiring up between a 5108 chassis and 6248?

If the devices are less than 10m apart (including cable management) then Twinax cabling (fixed length copper cable with built in transceivers) is recommended. It's far cheaper than optics, uses less power and has lower latency.

As I said previously:
-Twinax is cheaper
-Twinax uses less power
-Twinax has low latency
