I'm looking to install a Cisco UC500 for a small business and wonder if the unit out of the box supports incomming FAX's.

Hi,
No, fax will not be supported out of the box.
You can probably get it working with a single command though.
voice service voip
modem passthrough nse codec g711ulaw

But it will support incomming faxes delivered to e-mail?

The UC520 will take a fax in by the built in FX0 ports only and deliver it to a users mailbox.
