Is there a way to run the Cisco SPA112 ADA into the inline phone wiring of a building so multiple analog phones could instantly be converted to VOIP phones or would this cause quality issues?

No issue with that.
I have a spa2102 done that way. Just make sure to disconnect the in home wiring from the PSTN, so the wiring is just connected to the spa2102 via the in wall wiring.
