Hi Tim,
The 3560 should work and should have enough PoE capabilities, however you would need to manually program the switch up using CLI or Cisco Configuration Professional, and you would need to get our support from the Netpro forums not the SMB one like this one
It would be easier to just use the new SF/SG-300 series, they are better suited for the UC-500 series, but that is a sales thing and something for you to work out internally
