Are there any instructions for installing 8.6.2 on the UC540? I'm pretty sure I'm on 8.6.1 now. I'm curious, will upgrades to 8.6.2 wipe out the current configuration and require us to built the configuration from the ground-up? I've only ever used CCA for configuration changes, if that matters.
I took a look at the ZIP file I downloaded, and didn't find any documentation for installing. If someone could just shove me in the right direction it would be much appreciated.
Also, any tips ("watch out for this," or "this could happen") would be greatly appreciated.
Also, if installing 8.6.2 isn't advisable for some reason (too early, needs more testing, etc.) that would be welcome input as well.

Here is a document which details the upgrade process in CCA: https://supportforums.cisco.com/docs/DOC-14562
It is a different software pack in that document, but the same process still applies to this version. During the upgrade you will have an option to backup and restore the configuration, so you should not lose any existing configs or data.

I'm not aware of any valid reasons to not upgrade to SWP 8.6.2.

If you look at the release notes, there is little or no reason to update the system from 8.6.1 to 8.6.2.
No signficant / major bug fixes.
Then again if CCA is important to you, you may like the latest improvements.

So upgrade the CCA, and skip the 8.6.2? That is, I can upgrade my CCA while sticking w/ 8.6.2, correct?

You can certainly upgrade CCA, but not the software pack.
