Recently installed the 7-2-5 spa525g firmware to the UC500 runniung 7.0.3, but the phones do not auto update when rebooting. All commands are correct as the phone attempts to load the firmware but shows a quick failure message on the 525g display. Not sure where to look/go next to make get this working. Any thoughts?

Last note. All ACL have been removed from all interfaces for testing purposes, but this did not correct the issue. Of course, this is a CCA built configuration besides the changes to the phone load commands.
I do notice that the tftp source int command is pointing to the loopback0 interface, but the option 150 command in dhcp pool phone is pointing to the BVI100 interface.
You need the .bin suffix on the alias in the tftp-server command. To debugs these sorts of problems, 'debug tftp event' is a good start as it will show you what filename is being requested and whether or not the UC500 has been able to find it and send it correctly.
That all looks normal. There are a bunch of different config files and localisation files that get loaded in addition to the firmware. Not all of these will necessarily be available on the system - particularly when the locale in use is US English since that is the default locale for the phone. I don't see any problem here.
